Um, while there is this strange assumption that anything posted on the web is public domain, the fact is, if Peter and Ian haven't given this guy permission to reproduce their writings, he is violating the law by putting them on his site. At best, he can link to site which HAVE gotten their permission, like, um, this one.

This is what I posted in their "Making Absinthe" area:

Hello "hobbysts"... As a home absintheur with some years of experience, I will like to make a contribution.

First, you cannot make absinthe just by macerating herbs. Wormwood contains the good stuff (thujone) and the bad stuff (absinthin, the second most bitter substance known)

Simple maceration would extract both, leaving you in a quandary: if you put little wormwood to make it drinkable, there will be too little thujone for secondary effects. If you put enough wormwood for secondary effects, the resulting swill will be undrinkable.

So the only way to make absinthe that "works" and that can be drinked at the same time is through destillation.

There are sources for some sophisticated stills, but the ol' pressure cooker and bucket with coiled copper tube works pretty well, and it's probably pretty close to the equipment used by Dr. Pierre Ordinaire in his kitchen. Just DONT use it over an open flame.

As far as the best recipes, you guys are in luck: if you go to:

you will find several original recipes of 1899. The "Swiss Absinthe of Pontarlier" is probably pretty close to the original Pernod FIls, and it dont get any better than that.
