Of course Michael Chiarello didn't talk about "distillate". He just bought some grappa and put lemons or rosemary in it for a few weeks.

yah, i assume that's something we can discuss. considering even michael chiarello (sp?) even did a segment on one of his cooking shows once about flavoring and coloring grappa and how you too can do it at home. don't see the feds goin after him hehe.

Y'know, there really isn't anything illegal in the COLORING step. Hell, you aren't even using A. absinthium (except Dr. O ;) .

Let's just say somebody had some perfectly legal clear liquor, for which they had paid all appropriate taxes, and then wanted to color it with herbs...

Nabber86,

I red some references and some recipe said to colorate the 1/2 of the distillate and some said to colorate all the distillate.So, I just wanted to know wich technique is the best.

Do it the professional way. Add lots of flourescent green food coloring to it till it almost glows.

When you're doing the coloration process, what's the best way to do it : take the half of the distillate and color it and mix it with the rest of the distillate or color all the distillate.Thank you for your help!
