The National Honey board says:

The average pH of honey is 3.9 (with a typical range of 3.4 to 6.1)

The only way you're going to know for sure is to test the *water you have* mixed with *the honey you have*. PH test strips are sold by home brew supply stores. Get the more expensive ones - the cheap ones aren't any good.

OK I know a lot of you are into cooking/brewing/chemistry...

How acidic or basic is a strong honey-water solution?

I know, you need to know the pH of my tap water to give any kind of an answer. It's middling hard. Not hard enough to encrust my glasses heavily though.

This may have bearing on a health condition.
