Ah, but we aren't talking about wine here, are we? No. We are talking about herbal flavored grain alcohol...and what I am asking is not how to make wine, but if anyone knows how to boost the thujone level, or if anyone has tried it, in absinthe without using wormwood.

Well, you can make wine from apple juice, but it isn't quite the same isn't it?

So, why can't one use other plants to make absinthe, such as sage, or tansy? Is there a difference between alpha-thujone and beta-thujone? Sage has a lot of alpha-t, unlike wormwood...but what about tansy? It has a higher concentration of beta-thujone than artemisima absinthium does....
...is it possible to make an absinthe with a touch of wormwood for flavoring, and to add other herbs such as sage and/or tansy for a higher thujone level??
