Absinthe and Butterscotch Schnapps is great. It's sorta like a Slippery Nipple if you use a strongly (star)anise absinthe.

Does anyone else drink absinthe as an after-dinner drink mixed with liqueurs? Here are my two favorites:

1 part ruby port + 1 part absinthe (yummy with desert or chocolate).

1 part Barenjager + 1 part absinthe (This is great if you have a cold or sore throat). The sweetness of the honey liqueur really complements the anise taste. And it's soothing to the throat.

For these I usually use Mari Mayans because I think the combinations need a strong anise flavor to work.
