In looking at different modern absinthes, some are obviously artificially colored and some not so obviously. IMO, virtually all of the modern products seem to have artificial coloring (which is much quicker and cheaper than doing it the old fashioned way).
A way to determine if the color is natural or from food coloring is the following:
Take a small sample and put it in clear glass. Leave it where it will receive direct sunlight for 2 days. If colored naturally, it will become brown. If it contains artificial coloring, the color will remain unchanged.
