I was having a look at the 2000/2001 Annual report for the UK based Wine and Spirit Association, and it appears their Imported Spirits Committee have absinthe in their sights as one of the next beverages to develop formal definitions for, presumably for the purposes of lobbying for adoption by UK and EU food authorities.
And our friends at Sebor happen to be members.
They have already been involved in developing definitions with the Mexican authorities for Tequila.....
