Proceed as before while increasing however, if desired, the quantity of alcohol and decreasing that of water, so as to obtain a product measuring 49 to 50 degrees.

 

Fine Absinthe
Grand Wormwood, dried and separated 2 kilogr. 500
Petite Wormwood, dried and separated 1 kilogr. 500
Dried Hyssop Flowers 1
Dried Lemon Balm 1
Green Anise 5
Star Anise 1
Coriander 1
Fennel 2
Alcohol at 85 degrees 51 liters.

Macerate as described previously and distill with 25 liters of water so as to obtain 50 liters of product, then add 30 liters of alcohol and 20 liters of water. The product will measure 65 degrees. Finally, here is a formula used by a spirit merchant of renown in Paris, which is much appreciated in the numerous establishments that serve it.

Leaves and Flowers of Grand Wormwood 500 gram.
Leaves and Flowers of Petite Wormwood 100
Hyssop 60
Angelica 10
Citronelle 120
Green Anise 700
Star Anise 100
Fennel of Florence 700
Star Anise 200
Coriander 100
Alcohol at 90 degrees 20 liters.
