Description: Moulin Rooz is Australia's first premium Absinthe. Five times-distilled from the finest Australian grapes, with perfect balance of Elderflower, Gentian, Fennelseed, Hyssop and Wormwood(Thuj0ne), Moulin Rooz is further enhanced with Austraian Native Aniseed Myrtle and other selected botanicals. A perfect expression of bitter and aromatic herbs, with hints of the Australian Bush. (Natural herbal particles may be present)

Doubs Mystique

From Absinthe Classics (www.absintheclassics.com): Doubs Mystique "Carte d'or" is a superb ultra-premium
absinthe distilled in century old alambics in Pontarlier, in the
heart of the Doubs region of eastern France, the historical
home of absinthe.

Our aim in formulating and distilling Doubs Mystique Carte d'or
was simple: we wanted to make, absolutely without regard to
cost or technical difficulties, the finest, most complex, most
delicious absinthe possible. How well I've succeeded will be
up to you to judge, but the feedback we've received from some
of the most expert and demanding connoisseurs has been
nothing short of outstanding. Doubs Mystique is not, unlike our
newly released Roquette 1797, an historical-recreation
absinthe. It's a modern absinthe, to please the modern palate,
although one that pays homage to the recipes and methods of
the past. No other modern absinthe has as extensive a herb
bill - the secret, we believe, of Mystique's richness,
smoothness and remarkable complexity of aroma and flavour.

Great review, C.F, I can't wait to taste mine (hopefully today).

I'm more than a bit of an aesthete, myself, however penalizing such a wonderful-sounding absinthe so heavily, based on the presentation, seems just a little harsh…unless, of course, you have an absinthe bottle display on your back bar that the Mystique won't enhance. Besides, from an anti-oxidation perspective, I think the twist-off cap will do a more effective job than a T-cork, anyhow. I do agree that the bottle shape could be a tad more elegant, though.

Indeed, I even felt bad taking points off for the cover of the book so to speak. I've heard similar comments on it's aesthetic from two other friends that purchased the Mystique. As with wine, twists caps do a better job sealing the bottle, but I feel the same way about those too. Perhaps I am too atavistic. Hopefully others will read the entire review and not get too caught up on the numbers as Mystique is a phenomenal absinthe. Nice work Oxy!!!

Absinthe Roquette 1797

From Absinthe Classics (www.absintheclassics.com): The Roquette 1797 is a complex, unusual and spicy absinthe, based directly on a late 18th century
manuscript recipe. It represents the first serious attempt in the modern era to recreate an
absinthe from the very birth of La Fee Verte, when the drink straddled the line between liquor and
potion, when it was as much magical and mysterious elixir as fashionable aperitif.

The 1797 contains the classic trinity of anise, fennel and grande wormwood, together with several
other herbs, some of which will be found in no other commercially available absinthe. The absinthe
is batch distilled in Pontarlier in an antique alambic, and is available in only very limited quantities.

Aberlour has a clean bot? I have Herencia de Plata anejo, it has the best corking ever and the bot is stylish as well. Btw, it is not absinthe.

Indeed, the Roquette 1797 heightens the senses like some pre-bans simply do not.
I have recently appraised a Pernod Fils that I also rated at 92/100. This bottle came from the 1914 cache of 76 bottles that Oxy purchased a year or so ago. An yes, Archive Spirits 1797 is completely on par, perhaps even better than the pre-ban PF. With the pre-ban PF and others it's often the experience itself that heightens the senses more than anything else. Whereas with some absinthes like Roquette 1797 and some pre-bans like Edouard, and even PF, the senses are awakened, seemingly by the absinthe in and of itself. David and Peter have done an incredible job here, and those who taste this absinthe will experience 1797 and want to purchase a case.

I knew you'd love these two absinthes Absomphe. My favorite is still the 1797.

I got that, although if you hadn't deducted those 4 points for presentation, the Doubs would have won out.

I suppose that outstanding wormwood (so nicely showcased) in the Doubs gave it the very slight edge for me, although I love that somewhat exotic, and spicy profile of the Roquette, and I think it was beautifully integrated into the more traditional flavors. I think picking my favorite of the two would come down to my mood on a particular day, since they're both beautifully crafted absinthes.
