I thought it was only unhealthy if it starts to burn/smoke, then it turns into a carcinogen...

but someone else told me that so I could be completely wrong.

I beleive you are correct. Olive oil is actually pretty healthy, much higher in unsaturated fats and omega 3 and 6 fatty acids then vegetable oil.

Could you explain your comments about olive oil?

I've not heard anything about dangers of heating olive oil. The stuff rocks as an anti-cancer preventative.

I make the best french fry in town using olive oil and potatos from Idaho.

The trick is you need to be carefull not to burn the oil, as long as you don't burn it it's fine... But somehow, I have developed a special skill at heating sensitive things without burning it ;-) .

Not that anyone could tell the difference between a potato from the Canadian Maritimes or the American Midwest. Especially after frying them up in olive oil and covering them with cheese and gravy. I'm getting hungry all of a sudden.

Because Spain is a major olive-oil producer. There are cheaper ways to GET Spanish olive oil than ordering it by the bottle from a small store, but it is a popular product on its own merits.
