Perhaps that is why they sell pails to brew ales in at the home brew store?

Stefano's 2nd iteration of L'Ancienne.
This one has aged into an immensely satisfying complex absinthe. There are very few absinthes out there I could get 4 consecutive glasses into and still look forward to each sip, but this is one of them. Delightful! |

I didn't find my version 2 changed taste at all over the time I've had it, but then, not knowing if I'd ever have another bottle, I haven't exactly been pounding it down lately. Actually, I haven't had a glass in quite a while. Last time I did though, it was just how I remembered it. I suppose the Private Preserve might have something to do with that.
