Now see, this is where critical thinking comes in. How much is the louche disturbed by drinking the absinthe? And if folks didn't stir in the old days they wouldn't have spoons like this (thanks oxy):

If you like the stronger layer at the top, by all means sip it first, but I find no harm in stirring at all.

Personally, I think there is to much fixating on the louche and super-slow drips and so on. Not that it's not a wonderful part of the charm of absinthe, but most cafes served water in carafes, which you just can't hold steadily for 10 minutes!

I had my first two glasses last night and all I can say is this stuff is awesome. It has a really great taste not too sweet, not bitter, and a nice hint of licorice. Also, it wasn't nearly as strong as I thought it would be, I was prepping myself for something like 151, but when mixed it's really not that harsh.

I was kind of skeptical about it's alcohol content when i first opened the bottle because I was expecting the intoxicating fumes of a 151 bottle, but you can't even smell the alcohol on the bottle, it smells lilke licorice candy. Is this normal for a bottle of emile 68?

Yeah, thats what you'll smell at first, and actually its anise not licorice. The more you drink and buy (and drink and drink and buy and buy and on and on....) the more you'll be able to discern the mix of other herbs and such.
