The color was surprisingly bright and vivid, and caused debate. Was it too bright and vivid that it should lose marks for looking artificial ? All four panelists decided that it looked natural, so this color is the real green fairy then. The only reason it did not get 10/10 was that none of us knew enough to know if this is what 10/10 looks like, and we are critical critics who are always looking for improvement. Very good color.

A lovely, very good louche. It did not start too early, it stayed at the bottom at first, it swirled and seethed, it went to the top leaving a thin line of unlouched spirit, and then it all turned creamy and thick. I am so hung over that I cannot tell from our scribbled notes why we only gave it 9 rather than 10, but there was a reason, I just cannot remember what it was.

Very good. The real green fairy. Not totally creamy, so it only gets 9 rather than 10, but the green is lovely.

AROMA 25/30
This is absinthe. Everybody thought it was a cocktail of Alpine herbs at the blind tasting, and totally different from pastis or other forms of imitation. Not everybody was entirely happy with it though. Some thought it had a slightly boggy hint, not the swampy smell of burnt distillate, but just a hint of an Alpine bog herb as opposed to an Alpine dry hill-slope herb. One panelist said that this herb had small yellow flowers, but we were quite drunk by then.

Very good mouthfeel. Creamy, thick, the warm, rough, feel of real silk, and the "baby-powder" effect. Why only 7? We were very critical, and despite the good mouthfeel everybody thought it was thin in places and just not strong enough. Perhaps we should have given it 8, the average score was 7-1/2, so it was a tossup.

TASTE 17/20
Excellent. It is all there, everything an absinthe should be. There was a wonderful cocktail of Alpine herbs with no single flavor predominating. We could all taste the bitterness of the wormwood, the licorice-like qualities of the green anise and fennel, distinct and different, the citrus-like flavor of the melissa, without it being citrusy, all balanced and expellant. Two of the four panelists liked each and every individual flavor, and two found a single flavor hiding in the cocktail that they did not like so much. Nearly perfect. Only 17/20 because we are critics looking for improvement. The aftertaste was brilliant. It lingered for hours. For the first half-hour it was at the back of the mouth, a lovely bitterness from the wormwood. After half an hour (and two pints of real ale) that faded, and then there was the same lovely bitter aftertaste in the front of the palate above the top front teeth. All four panelists agreed on this. I am still having taste flashbacks this morning. We were tasting BdF at the same time, so we were guessing which long term aftertaste came from which absinthe, but in our drunkenness we thought we knew.

Excellent. I cannot add to what I have said above. The real thing.

This was the production release, not a distiller's proof. A very classy, nice bottle with a tall neck and elegant labeling. The foil was good, thick, and was like real metal. A lovely wax seal, easily chipped off with blows from a steel knife handle, and a nice long cork with elegant patterns.

A vibrant emerald. No haze. Couldn't be better.

The louche is incredibly uniform and mesmerizing, and it's fun to watch the oil torrents swirl about as the water is added.

The green translates to the louched glass incredibly well. Almost looks artificial. A luminous and rich green that's beautiful.

AROMA 25/30
The first smell is a toasty-honey kick that is interesting, but not exactly what one would call "clean" smelling. This is probably due to the marc spirit base, which, while likely faithful to vintage absinthe, is nonetheless flawed and a little distracting. Once the honey-alcohol smell subsides, there's a nice minty note and rich anise aroma that makes one's appetite kick in. The aroma is sufficiently strong, and although not room filling, is bold enough that you can smell the glass from a few feet away.

Very rich. Not as chewey as some absinthes I've had, but it firmly coats the mouth and has a nice peppery bite that adds a complex dimension to the mouthfeel.

TASTE 17/20
This absinthe is multi-dimensional, with an up front alcohol kick, followed by some of the best anise creaminess out there, which is supported by wormwood that is good but could be more floral and some hyssop which rounds it out. Every now and then some coriander pepperiness sticks out, and the fennel aftertaste is superb which is supported by some minty tones. There is a tongue numbing character that is a bit excessive, and the flavours tend to arrive individually rather than as a seamless whole.

This is an improvement over the distillers proof. The nutty stink is gone, and the flavour seems to be fuller developed and the alcohol is less distracting than before. The marc spirit base is still a little too dominant for my preference, however, but I've noticed a similar character in some vintage brands. All of the ingredients are outstanding, although I feel the wormwood could have been more floral. Overall, however, this is the best commercial verte on the market.

A beautiful and vivid light green hue. I could have easily granted it a 10, but I rarely give perfect scores because I feel there is always room for improvement. Honestly though, not sure it gets much better.

Absolutely mesmerizing. Louches beautifully, not too soon. The best things come to those who wait, as the louche "creeps" up on you. It makes you want to prepare another glass just to see it again, even if you don't necessarily want to drink anymore. Again I probably could've given it a 10, but I don't want T.A. resting on his laurels. We are pursuing perfection here, even if it is unobtainable.

I tried to think of a reason not to give this a 10, but such a reason eluded me. The color was such a vibrant and lively green color that as some have said, it almost looked artificial. Of course it is as natural as it gets in reality. The thin line that hovered atop of the glass was an absolutely breathtakingly brilliant emerald. It was just as I have seen in the old paintings by the great artists of our past, and just as I have heard described by the most eloquent of poets. I can imagine that this is what the green fairy is supposed to be.

AROMA 24/30
A very balanced complexity of aroma's are unleashed during the louche, and somewhat settle nicely and become more delicate as you nurse the drink. I did detect what I thought to be a slight boggy and/or burnt aroma, only after the drink had already been prepared as I was sipping it. It was not necessarily unpleasant, but rather unique. I could also faintly detect the "baby powder" scent fill the portion of the room I was in at the time. I have experienced better, but still I was very pleased overall with the aroma.

Very nice feel overall. It did seem to be just a "tad" thin compared to some others I've had. I make it a point to immediately note this criteria after the first sip, since you cannot get an accurate feel after this due to your mouth being coated. I believe I have experienced creamier and richer, although it was some time ago now. Still exceptional without any doubt, don't get me wrong.

TASTE 18/20
This is probably the best tasting and most balanced absinthe I have ever had the extreme pleasure of tasting. So then why not a 20 you ask? Again, if I go giving out perfect scores now what will I do if or when a better tasting absinthe hits the market? I am simply leaving room for improvement. The predominant anise flavor in no way overpowers the other subtleties of the drink. Again very balanced, very smooth, no bitterness whatsoever. Excellent.

Incase you can't tell from my rambling above, I loved this absinthe. IMO this is the flagship of what is widely regarded as the best line of commercially available absinthe today (Jades).

Fresh, radiant green. I am not making this up: We shared the Edouard with two artist friends, neither of whom knew anything about absinthe, and one said, “that’s peridot.”

Slow, with beautiful oil tracings, distinct layering, and with a slighly faster drip, an amazing transient pearlescent effect. As it louches, be sure and watch from the top as well as from the side, to catch the cloud-like swirls of color. The final layer of emerald green at the top is awe-inspiring.

Brilliant opalescent green. It almost glows.

AROMA 26/30
I am not making this up either: Artist friend #2 said, “it smells like a mountain meadow in the springtime.” This was clean, crisp, and bright, with mint in the foreground. Perhaps because the absinthe was reasonably well-aged — it was 14 months old — there was no trace of the notorious Jade funk, even straight out of the bottle. I’ve knocked off a few points only because the aroma could conceivably blossom into the room more impressively.

Very full and multi-layered, but it’s a little too sharp after the aroma — it could be rounder and softer.

TASTE 18/20
The color and aroma should have clued me in, but the taste surprised me. I was expecting a Wagnerian absinthe: Rich and dark-toned, along the lines of the Duplais verte. The richness is there, but there’s nothing dark about the taste of Edouard — it’s all fresh, light, and bright. Wormwood, anise, fennel and probably a half-dozen herbs are present and detectable, but nothing overwhelms the ensemble. The seemingly endless finish wonderfully balances anis and wormwood. I didn’t want to brush my teeth afterwards.

The balance is just about perfect: This absinthe smells like it looks, and — in a good way — tastes like it smells. Two days after having the Edouard for the first time, Mrs. Absinthesizer said, “I loved that verte.” It took her a lot longer to say she loved me.

PERSONAL NOTE: For nearly three decades, my gold standard for liquids has been an Armagnac that a friend paid $60 for in 1980 at a duty-free shop in Paris. The Edouard isn’t as refined in the mouth as that Armagnac — but I like its flavor even more.

Knowing what was the color of what was edouard not so long ago (2005) now is yellowish-thin green (2008)

very nice in a Pontarlier style

Pale olive, clear.

A natural, dense and even build-up. Lovely swirling with all the thin trails and thick clouds you could ask for.

Quite opaque with yellow and blue hues.

AROMA 27/30
In the bottle it's mostly caramel and sweet babypowder, but also an underlying complexity that is already very promising. Neat in the glass, I got something like a peated single malt with candy on top. Lemon, perhaps. With water it gives way to the typical Jade sweetness and light and you are left with more pure wormwood, fennel, lavender and a slight funk. It holds a lot of alcohol, and you will be tempted to add more water to tame it - don't, as it might increase the funk to a full blown sewer - add a little sugar instead.

Well-balanced creamy anise power. With more water it just gets more light and fresh, not thin.

TASTE 18/20
As in the aroma, I get limoncella and whiskey barrels. Fennel, liquorice root. Deep and complex but still fresh.

It lifts my spirit like only the very best stuff can. Proof that the raw materials are of the highest caliber. Connoisseur stuff for sure, still it seems firmly rooted in tradition. It might take time finding the right amount of water and sugar to balance the cream versus alcohol versus funk. The funk does seem to fade a lot with age.
